Champion Gourmet
When one thinks about Taiwanese food and culture, one must not forget to mention "niu rou mian", which translates to beef noodle soup. It is a dish that has made such a great impact on a country, that it has become a way of life for many Taiwanese. It is near impossible to walk through more than a couple blocks without spotting a restaurant specializing in this dish. There are niu rou mian festivals and a annual competition, where the winner gains instant fame amongst his countrymen and women.
This dish however, is not native to Taiwan. It made its migration here with the Nationalist party in the 1940's and 50's during the cultural revolution. There are many regional variations on the dish. However, the Sichuan style has the most dominating influence on "niu rou mian" in Taiwan.
My favorite place to eat "niu rou mian" in Las Vegas, is Champion Gourmet. This restaurant specializes in Taiwanese home cooking, or my Grandma's cooking. What you will get is the most amazing, angry, bowl of beef noodle soup in town, with tender pieces of flank steak and beef tendon, flecked with preserved mustard greens, and spiked with chili oil.
If I had a bowl full of this in front of me, then there are no other foods in the world I would rather eat.

California Hotel - Market Street Cafe
If you are ever in Downtown Las Vegas during late night (after 11 pm), head to the California Hotel's Market Street Cafe.
The oxtail soup is fantastic, and for only $7.95, it is one of the best deals in town. It comes with 5 pieces of 3 inch-cut oxtail, vegetables, and 2 scoops of rice.
